Gluten Free Lemon Drizzle Cake

Ingredients

This delicious gluten free lemon drizzle cake is sure to be a hit at your next gathering. For the cake, you will need the following ingredients: 200 grams of gluten-free self-raising flour, 2 teaspoons of baking powder, 200 grams of caster sugar, 2 lemons, 2 eggs, 200 ml of vegetable oil and 250 ml of natural yoghurt. For the lemon drizzle topping, you will need the following ingredients: 25 grams of butter, 100 grams of icing sugar, 2 tablespoons of lemon juice and 2 tablespoons of hot water.

Instructions

Start off by preheating the oven to 180°C and greasing a 20cm cake tin. In a large bowl, mix together the gluten-free self-raising flour, baking powder and caster sugar. Grate the lemons and add the zest to the mixture. In a separate bowl, whisk together the eggs, vegetable oil and yoghurt until combined. Slowly add the wet ingredients to the dry ingredients, whisking continuously until all the ingredients are fully incorporated. Pour the mixture into the prepared cake tin and bake in the preheated oven for 35 - 40 minutes. To check if it is cooked through, insert a skewer into the centre of the cake. If it comes out clean, it is ready.

Once the cake is cooked, remove from the oven and leave to cool for 10 minutes. To make the lemon drizzle topping, place the butter, icing sugar, lemon juice and hot water in a saucepan. Heat the ingredients over a low heat, stirring continuously until the butter has melted and the mixture is smooth. Remove from the heat and spoon the topping over the cooled cake. Leave the cake to cool completely before cutting and serving.
