      Butternut Squash And Chorizo Pasta

      Ingredients

      • 1 butternut squash, peeled, seeded, and cubed
      • 1/2 pound chorizo, crumbled
      • 1 onion, diced
      • 2 cloves garlic, minced
      • 1/2 cup white wine
      • 1/2 cup chicken broth
      • 1/2 cup heavy cream
      • 1 teaspoon oregano
      • 1/2 teaspoon red pepper flakes
      • 1/2 teaspoon salt
      • 1/4 teaspoon black pepper
      • 1 pound penne pasta
      • 1/4 cup freshly grated Parmesan cheese

      Instructions

      1. Preheat oven to 400 degrees F. Place cubed butternut squash on a parchment lined baking sheet. Drizzle with olive oil and season with salt and pepper. Roast for 25-30 minutes, or until tender and lightly golden. Set aside.
      2. In a large skillet over medium heat, cook the chorizo until lightly browned, about 5 minutes. Remove from skillet and set aside.
      3. Add the diced onion to the skillet and cook until softened, about 5 minutes. Add the garlic and cook for 1 minute. Pour in the white wine and scrape up any browned bits from the bottom of the skillet.
      4. Add the chicken broth, heavy cream, oregano, red pepper flakes, salt, and black pepper. Bring to a simmer and cook for about 5 minutes.
      5. Add the roasted butternut squash, chorizo, and penne pasta to the skillet and stir to combine. Cover and cook for 10 minutes, stirring occasionally, until the pasta is tender.
      6. Sprinkle with freshly grated Parmesan cheese and serve.
