- 1 butternut squash, peeled, seeded, and cubed
- 1/2 pound chorizo, crumbled
- 1 onion, diced
- 2 cloves garlic, minced
- 1/2 cup white wine
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1 teaspoon oregano
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 pound penne pasta
- 1/4 cup freshly grated Parmesan cheese
Instructions
- Preheat oven to 400 degrees F. Place cubed butternut squash on a parchment lined baking sheet. Drizzle with olive oil and season with salt and pepper. Roast for 25-30 minutes, or until tender and lightly golden. Set aside.
- In a large skillet over medium heat, cook the chorizo until lightly browned, about 5 minutes. Remove from skillet and set aside.
- Add the diced onion to the skillet and cook until softened, about 5 minutes. Add the garlic and cook for 1 minute. Pour in the white wine and scrape up any browned bits from the bottom of the skillet.
- Add the chicken broth, heavy cream, oregano, red pepper flakes, salt, and black pepper. Bring to a simmer and cook for about 5 minutes.
- Add the roasted butternut squash, chorizo, and penne pasta to the skillet and stir to combine. Cover and cook for 10 minutes, stirring occasionally, until the pasta is tender.
- Sprinkle with freshly grated Parmesan cheese and serve.
