Ingredients
For the scones:
- 2 cups all-purpose flour
- 3 tablespoons granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup cold butter, cut into small cubes
- 1 cup cream cheese, softened
- 1 cup frozen berries, thawed
- 1 teaspoon vanilla extract
- 1 large egg
- 2 tablespoons heavy cream
Instructions
Preheat your oven to 400°F and line a baking sheet with parchment paper. In a bowl, whisk together the flour, sugar, baking powder, baking soda and salt. Add the butter and cream cheese to the bowl and cut into the dry ingredients using a pastry cutter or a fork. When the mixture resembles coarse crumbs, add the berries, vanilla extract, egg and cream and mix until just combined. Do not over mix.
Transfer the dough to a lightly floured work surface and knead lightly until the dough comes together. Shape the dough into a round and roll out to about 1/2-inch thick. Cut the dough into 8 wedges using a floured knife or a pizza cutter. Place the wedges onto the prepared baking sheet and brush with a little heavy cream. Bake for 15-20 minutes, or until golden brown.
Remove the scones from the oven and let cool on a wire rack. Serve warm or at room temperature with butter and jam, if desired.
