This recipe calls for:
  • 3-4 ripe bananas
  • 1/3 cup melted coconut oil or vegetable oil
  • 1 cup light brown sugar
  • 1 large egg, lightly beaten
  • 1 teaspoon vanilla extract

  • Pinch of salt
  • 1 and 1/2 cups of all-purpose flour
  • Optional: 1/2 cup chopped nuts or chocolate chips

Instructions

Preheat your oven



Preheat your oven to 350 degrees Fahrenheit. Grease a 9x5 inch loaf pan with butter or cooking spray and set aside.

Mash the bananas



In a large bowl, mash the bananas with a fork until they are completely mashed. Add the melted coconut oil or vegetable oil, light brown sugar, egg, and vanilla extract to the mashed bananas and mix until combined.

Add in the dry ingredients



Add the baking soda, salt, and flour to the wet ingredients and mix until just combined. If you are adding in nuts or chocolate chips, fold them into the batter now.

Pour the batter into the pan and bake



Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
