Delia's Coffee and Walnut Cake Recipe

Instructions:

Making the Cake:

Preheat the oven to 180⁰C/350⁰F/Gas Mark 4. Grease and line two 8”/20cm sandwich tins. In a large bowl, add the self-raising flour, caster sugar, eggs, instant coffee, vegetable oil, and milk. Beat well until combined. Add the chopped walnuts and mix into the batter. Divide the cake mixture evenly between the two tins and spread out evenly. Bake in the oven for around 25-30 minutes or until a skewer inserted into the centre of the cake comes out clean. Leave to cool in the tins for a few minutes, then carefully turn out onto a wire rack to cool completely.

Making the Frosting:

In a bowl, add the cream cheese, butter, and icing sugar. Beat together until light and creamy. Once the cakes are completely cool, spread the cream cheese frosting onto one of the cakes. Carefully place the other cake on top. Sprinkle with chopped walnuts for decoration.
