To make the stuffing, heat the ghee in a pan over medium heat. Add the crumbled paneer and cook for 2-3 minutes. Add the garam masala, red chilli powder, cumin powder, coriander leaves and salt. Mix well and cook for 2-3 minutes. Remove from the heat and set aside to cool.
Divide the dough into 8 equal parts. Take one part of the dough and roll it into a circle. Place 1 tablespoon of the stuffing in the center of the circle and gather the edges to enclose the stuffing. Seal the edges and roll it into a flat disc, about 5-6 inches in diameter.
Heat a griddle over medium heat. Place the paratha on the griddle and cook for 1-2 minutes, until the bottom is golden brown. Flip the paratha and cook for 1-2 minutes, until the other side is golden brown. Brush with ghee and cook for 1 minute. Flip the paratha and brush again with ghee. Cook for 1 minute, until both sides are golden brown. Remove from the heat and serve hot.
