Leek And Potato Soup Recipe Without Cream



Leek and potato soup is a classic and comforting soup recipe that is perfect for cold winter days. It’s simple, easy to make and full of flavor. This version is made without cream, so it’s lighter, healthier and still creamy and delicious! Plus, it's vegan-friendly and gluten-free, too.

Ingredients

  • 1 tablespoon olive oil
  • 1 yellow onion, diced
  • 2 cloves garlic, minced
  • 2 leeks, white and light green parts only, sliced
  • 3 large russet potatoes, peeled and diced into small cubes
  • 4 cups vegetable broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon smoked paprika
  • 1/4 cup chopped fresh parsley

Instructions

Heat the olive oil in a large pot over medium-high heat. Add the diced onion and sauté for 3-4 minutes, until softened and beginning to brown. Add the garlic and leeks and sauté for an additional 2 minutes.

Add the diced potatoes and sauté for 1-2 minutes, stirring often. Pour in the vegetable broth and season with salt, pepper, thyme and smoked paprika. Turn the heat to high and bring the soup to a boil. Once boiling, reduce the heat to low, cover the pot and let the soup simmer for 15-20 minutes or until the potatoes are cooked through and soft.

Once the potatoes are cooked, turn off the heat and use an immersion blender to blend the soup until it's creamy and smooth. (Alternatively, you can transfer the soup to a blender and blend until smooth.)

Stir in the chopped fresh parsley and serve the soup hot, topped with extra parsley and a drizzle of olive oil, if desired.
