Chicken and Mushroom Pie - Jamie Oliver's 30 Minute Meal

Ingredients

This delicious Chicken and Mushroom Pie is a great dish to whip up in no time. You will need the following ingredients to make this Jamie Oliver classic:

  • 2 tablespoons of oil
  • 2 onions, finely chopped
  • 2 cloves of garlic, crushed
  • 3 skinless chicken breasts, diced
  • 200g mushrooms, sliced
  • 2 tablespoons plain flour
  • 450ml chicken stock
  • 2 teaspoons of Dijon mustard
  • 2 tablespoons of freshly chopped parsley
  • 1 sheet of ready-rolled puff pastry
  • 1 egg, beaten

Instructions

Firstly, heat the oil in a large non-stick pan over a medium heat. Add the onions and garlic and cook until softened, which should take around 5 minutes. Then, add the chicken and mushrooms and fry for a further 5 minutes.

Next, stir in the flour and cook for a minute or two. Then, pour in the chicken stock and mustard. Simmer for 5 minutes until the sauce has thickened and the chicken is cooked through. Finally, stir in the parsley and season with salt and pepper.

Preheat the oven to 200C/400F. Place the chicken and mushroom mix into a large ovenproof pie dish. Roll out the pastry on a lightly floured surface and cut to fit the top of the dish. Brush the rim of the dish with some beaten egg and place the pastry lid on top. Brush with more beaten egg and use a fork to press down the edges of the pastry.

Bake in the preheated oven for 20-25 minutes until the pastry is golden and crisp. Serve with some lightly cooked vegetables or a fresh salad.
