Ingredients

  • 500g chicken breast, diced
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 200g mushrooms, sliced

  • 1/4 cup of white wine
  • 1/2 cup of cream
  • 1/2 cup of chicken stock
  • 2 tablespoons of cornflour
  • 1 sheet of ready-rolled puff pastry
  • Salt and pepper, to taste

Instructions

Preparing the Pie Filling

Heat the olive oil and butter in a large pan over medium-high heat. Add the diced chicken and cook until golden brown. Add the onions, garlic, and mushrooms and cook for a further 3 minutes. Add the thyme, white wine, cream, chicken stock, and cornflour and simmer for 10 minutes. Season with salt and pepper to taste. Allow the mixture to cool before assembling the pie.

Assembling the Pie

Preheat the oven to 200°C. Grease a pie dish with butter. Unroll the puff pastry and cut it to fit the dish. Place the cooled filling into the dish and top with the pastry. Trim the edges and crimp them together with a fork. Prick a few holes in the top of the pastry to allow steam to escape. Bake for 25 minutes or until the pastry is golden brown.

Preparing the Chips

While the pie is baking, prepare the chips. Peel and chop the potatoes into chips and place in a large saucepan of boiling water. Boil for 5 minutes, then drain and transfer to a baking tray. Drizzle with olive oil, season with salt and pepper, and bake in the oven for 20-25 minutes or until golden brown.
