  • 1/4 cup chopped fresh cilantro
  • 4 loaves of fresh French bread, cut in half

Instructions:

Heat the oil in a large pot over medium heat. Add the onion, garlic, and ginger and cook, stirring often, until the onion is softened, about 5 minutes. Add the curry powder, cumin, coriander, turmeric, and cayenne pepper and cook, stirring often, until fragrant, about 1 minute. Stir in the tomato paste and cook, stirring constantly, for 1 minute. Pour in the coconut milk and chicken broth and stir to combine. Add the chicken and bell pepper and bring the mixture to a simmer. Reduce the heat to low, cover the pot, and cook for 15 minutes. Add the tomatoes and peas and cook, stirring occasionally, for 5 minutes. Stir in the cilantro and season to taste with salt and pepper.

To serve, place a scoop of the curry inside a half-loaf of French bread. Serve with additional cilantro, if desired.
