Vegan Shepherd’s Pie is a delicious, hearty and easy-to-make meal that will please everyone in the family. Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 2 large carrots, diced
  • 8 ounces cremini mushrooms, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried oregano
  • 2 tablespoons tomato paste
  • 1/4 cup dry red wine
  • 2 cups cooked lentils
  • 1 cup vegetable broth
  • 1 tablespoon vegan Worcestershire sauce
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 3 cups mashed potatoes
  • Chopped fresh parsley, for garnish

Instructions

Preheat the oven to 375°F and lightly grease a 9x13-inch baking dish.

Heat the olive oil in a large skillet over medium heat. Add the onion, garlic, bell pepper, and carrots, and cook for 8 to 10 minutes, stirring occasionally, until the vegetables are starting to soften.

Add the mushrooms, thyme, rosemary, and oregano, and cook for 5 minutes more, stirring occasionally. Add the tomato paste, wine, lentils, broth, Worcestershire sauce, salt, and pepper, and stir to combine.

Transfer the mixture to the prepared baking dish and spread it out evenly. Top with the mashed potatoes, spreading them out evenly. Bake for 25 minutes, or until the top is golden brown and the filling is bubbling. Let cool for 10 minutes before serving.

Garnish with chopped fresh parsley, if desired. Enjoy!
