Instructions



1. In a large bowl, combine the flour, water, baking powder, eggs, salt, sugar, and dashi powder (if using). Whisk until smooth.
2. Add the vegetables and pork and mix until everything is evenly combined.
3. Heat a large skillet over medium-high heat and add enough vegetable oil to coat the bottom of the pan.
4. Scoop 1/3 cup of the batter onto the hot skillet and spread it out into a thin circle. Cook for 3-4 minutes, or until the edges are golden brown and the center is cooked through.
5. Flip the pancake and cook for an additional 2-3 minutes, or until it's golden brown and cooked through.
6. Remove the pancake from the skillet and repeat with the remaining batter. Serve warm with your favorite toppings.

Toppings



Okonomiyaki is traditionally topped with a special okonomiyaki sauce, Japanese mayonnaise, pickled ginger, bonito flakes, and seaweed flakes. However, feel free to customize your toppings to your liking. Some popular toppings include kimchi, cheese, bacon, and scallions.
