How To Make Chutney From Green Tomatoes
Ingredients:
If you’re looking for a way to use up all of those green tomatoes, then making chutney is a great option. To get started, you’ll need 5 cups of green tomatoes, 2 cups of white vinegar, 1 cup of white sugar, 2 onions, 1 teaspoon of salt, 1 garlic clove, 1 teaspoon of ground ginger, 1 teaspoon of ground cumin, and 1 teaspoon of mustard seed. To make sure the chutney has the right consistency, you’ll also need ½ cup of raisins and ½ cup of chopped dates.
Instructions:
Begin by washing and chopping the green tomatoes into small pieces. Place them in a large pot and add the vinegar, sugar, onions, salt, garlic, ginger, cumin and mustard seed. Bring the mixture to a boil and reduce the heat to a simmer. Cook for about 10 minutes, stirring occasionally, until the tomatoes are soft. Add the raisins and dates and continue to simmer for about 15 minutes. Stir the mixture occasionally to prevent it from sticking to the pot. When the mixture is thick and the tomatoes are soft, it’s ready to be cooled and canned.
Canned Chutney:
Once the chutney has cooled, it’s ready to be canned. Place the chutney in sterilized jars and seal tightly. Place the jars in a pot of boiling water and let them sit for 15 minutes. Carefully remove the jars from the pot and let them cool on the countertop. Store the canned chutney in a cool, dry place and it should last for up to a year.
