- 500g/1lb beef fillet, trimmed of fat and cut into thin strips

- 2 tablespoons freshly squeezed lime juice
- 1 teaspoon freshly grated ginger
- 2 cloves garlic, minced
- 2 tablespoons chopped fresh cilantro
- 2 tablespoons chopped fresh mint
- 2 tablespoons chopped fresh Thai basil
- 1 red bell pepper, seeded and thinly sliced
- 1 green bell pepper, seeded and thinly sliced
- 1/2 red onion, thinly sliced
- 2 cups mixed salad greens
- 2 tablespoons roasted peanuts, chopped

Instructions



1. Heat the oil in a large skillet over medium-high heat. Add the beef strips and cook until they are browned, about 3 minutes.
2. Add the fish sauce, soy sauce, brown sugar, lime juice, ginger, garlic, cilantro, mint, and basil and cook for 1 minute.
3. Add the bell peppers and onion and cook for an additional 2 minutes.
4. Remove the skillet from the heat and transfer the beef and vegetables to a bowl.
5. In a large bowl, combine the salad greens and roasted peanuts. Add the beef mixture and toss to combine.
6. Serve the salad with additional lime wedges and extra dressing, if desired.
