No Bake Lotus Cheesecake Recipe
Ingredients
- 100 g Lotus Biscuits
- 50 g Unsalted Butter, melted
- 500 g Cream Cheese
- 50 ml Milk
- 200 ml Double Cream
- 3 tbsp Icing Sugar
- 1 tsp Vanilla Essence
Instructions
1. Start by crushing the lotus biscuits into small crumbs. You can use a food processor or place the biscuits into a Ziploc bag and use a rolling pin to crush them. Place the biscuit crumbs into a bowl and add the melted butter. Mix well until the crumbs are evenly coated.
2. Grease and line an 8 inch cake tin with baking parchment. Press the biscuit crumb mixture firmly into the bottom of the cake tin and place in the fridge to chill for 30 minutes.
3. In a separate bowl, mix together the cream cheese, milk, double cream, icing sugar and vanilla essence until smooth. Pour the mixture over the chilled biscuit base and spread evenly. Place the cheesecake in the fridge to chill for at least 2 hours.
4. Once the cheesecake is chilled and set, remove it from the cake tin and serve. Enjoy!
