Instructions



1. Preheat the oven to 350°F (180°C). Grease and flour a 9-inch (23cm) round cake pan.

2. In a medium bowl, whisk together the flour, baking powder, and salt.

3. In a large bowl, beat together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla.

4. Add the dry ingredients in three batches, alternating with the milk and beginning and ending with the dry ingredients. Pour the batter into the prepared pan.

5. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.

6. To make the filling, combine the ricotta, sugar, milk, and vanilla in a medium bowl and mix until smooth. Stir in the candied cherries and orange peel.

7. Cut the cake into three even layers. Place the bottom layer on a serving plate and spread with half of the ricotta filling. Top with the second layer of cake and spread with the remaining filling. Top with the final layer of cake.
