Ingredients
For the parathas:
- 2 cups whole wheat flour
- 1/2 teaspoon salt
- 1 tablespoon oil
- Water as needed
- 2 tablespoons ghee
For the stuffing:
- 2 large potatoes, boiled, peeled and mashed
- 1/2 teaspoon salt
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1 teaspoon red chili powder
- 1/2 teaspoon garam masala
- 1/2 teaspoon amchur powder
- 2 green chilies, finely chopped
- 2 tablespoons cilantro, finely chopped
- 2 tablespoons oil
Instructions
1. In a large bowl, mix together the whole wheat flour, salt, and oil. Slowly add water and knead the dough for about 10 minutes until it is soft and supple. Cover the dough and set aside for 30 minutes.
2. To make the stuffing, heat 2 tablespoons of oil in a pan over medium heat. Add the cumin seeds and fry for a few seconds until fragrant.
3. Add the mashed potatoes, salt, coriander powder, red chili powder, garam masala, amchur powder, green chilies and cilantro. Mix everything together and cook for about 5 minutes until the potatoes are cooked through and the spices are blended in.
4. Divide the dough into 12 equal parts and roll each part into a ball.
5. Take one ball and roll it out into a circle. Place one tablespoon of the stuffing in the center of the circle. Gather the edges of the circle together and pinch to seal. Flatten the stuffed ball and roll it out into a paratha.
6. Heat a griddle or tawa over medium heat. Place the paratha on the griddle and cook for about 2 minutes. Flip it over and cook for another 2 minutes.
7. Apply a little ghee or oil on both sides of the paratha and cook for about a minute or until golden brown.
8. Serve hot with your favorite chutney or pickles.
