- 2 pounds of beef chuck roast, cut into 4 pieces
- 2 tablespoons of olive oil

- 2 tablespoons of cold water
- 1/4 cup of chopped fresh parsley

Instructions


To begin, season the beef chuck roast pieces with the salt, pepper, garlic powder, onion powder, paprika, oregano, thyme, and cayenne pepper. Heat the olive oil in the Instant Pot, on the sauté setting and brown the beef on all sides. Once the beef is browned, remove it from the pot and set aside.

Next, add the beef broth, apple cider vinegar, brown sugar, Worcestershire sauce, butter, garlic, and red pepper flakes to the Instant Pot. Stir to combine and then add the beef back to the pot. Place the lid on the Instant Pot and set the valve to sealing. Cook the pot roast on the manual setting, for 60 minutes.

Once the cooking cycle has completed, allow the pressure to naturally release for 10 minutes. Then, do a quick release of the remaining pressure. Open the lid of the Instant Pot and remove the beef. Shred the beef with two forks and then set aside.

In a small bowl, mix together the cornstarch and cold water. Set the Instant Pot to the sauté setting and add the cornstarch mixture to the pot. Cook, stirring frequently, until the sauce has thickened. Then, add the shredded beef back to the pot and stir to combine.
