Ingredients
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 tablespoons plain flour
- 600ml fish or vegetable stock
- 500g potatoes, peeled and diced

- 1 teaspoon dried thyme
- 2 tablespoons chopped fresh parsley
- 3 tablespoons creme fraiche
- 25g butter
- 25g grated Cheddar cheese

Instructions
1. Preheat the oven to 190C/375F/Gas 5. Heat the olive oil in a large saucepan over a medium heat. Add the onion and cook for 5 minutes, until softened. Add the flour, then gradually add the stock, stirring all the time, until you have a smooth sauce.
2. Add the potatoes and simmer for 10 minutes, stirring occasionally, until the potatoes are just tender. Add the fish, thyme and parsley, then season with salt and pepper. Simmer for a further 5 minutes, until the fish is cooked through.
3. Transfer the mixture to an ovenproof dish and spread the creme fraiche evenly over the top. Dot with butter and sprinkle over the cheese. Bake in the preheated oven for 25 minutes, until the cheese is golden and the fish pie is bubbling.
4. Serve the fish pie hot, with fresh vegetables or a green salad.
