Tender Braised Lamb Shoulder Slow Cooker

- 1 cup of dry red wine
- 2 tablespoons tomato paste
- 1 teaspoon of honey
- 2 bay leaves
Instructions
Preparing the Lamb
Start by preparing the lamb. Place the lamb shoulder into a large bowl and season with the garlic powder, smoked paprika, onion powder, oregano, cumin, coriander, white pepper, and kosher salt. Toss the lamb to evenly coat in the spices.
Cooking the Lamb
Heat the olive oil in a large skillet over medium-high heat. Sear the lamb shoulder for about 5 minutes per side, or until the lamb is golden brown. Transfer the lamb shoulder to the slow cooker.
In the same skillet, add the diced onion and minced garlic and sauté for 3-4 minutes, or until the onion is translucent. Add the chicken stock, red wine, tomato paste, honey, and bay leaves and bring to a simmer. Simmer for 5 minutes, then pour the mixture over the lamb shoulder in the slow cooker.
Cover and cook on low heat for 8-10 hours, or until the lamb is tender and falls apart with a fork.
Serving the Lamb
Once the lamb is cooked, remove it from the slow cooker and shred with two forks. Discard the bay leaves and any excess fat. Serve the lamb with your favorite sides and enjoy.
