Ingredients

  1. Preheat your oven to 200°C/180°C fan. Roll out the puff pastry on a lightly floured surface and use it to line a deep 20cm pie dish.
  2. Heat the oil in a frying pan, add the onion and garlic, and fry for 5 mins until softened. Add the mushrooms, chicken, flour and stock, and cook for a further 5 mins.
  3. Stir in the thyme and peas, then tip the mixture into the pastry-lined dish. Brush the edges of the pastry with beaten egg.
  4. Roll out the remaining pastry and use it to cover the pie. Press the edges together to seal, then trim off any excess pastry. Make a few small slits in the top to let the steam escape, then brush with more egg.
