Instructions


1. In a large bowl, mix together the whole wheat flour, salt, and oil. Add enough water to make a soft dough. Knead the dough until it is soft and pliable. Cover the dough and let it rest for 15 minutes.

2. In a separate bowl, mix together the mashed potatoes, crumbled paneer, cilantro, cumin powder, garam masala, coriander powder, and red chili powder.

3. Divide the dough into 8 equal portions. Take one portion and roll it into a small circle. Place 2 tablespoons of the potato-paneer mixture in the center of the circle.

4. Bring the edges of the circle together and press gently to seal. Roll the paratha gently with a rolling pin until it is about 6-7 inches in diameter.

5. Heat a heavy-bottomed tawa or griddle over medium heat. Place the paratha on the tawa and cook for about 1 minute. Flip it over and cook for another minute. Brush the paratha lightly with oil and cook for another minute until both sides are lightly browned.

6. Serve the paratha hot with chutney, pickle, or yogurt.
