Coffee and Walnut Cake Recipe by Mary Berry
Ingredients
This delicious Coffee and Walnut Cake Recipe by Mary Berry is a classic that’s sure to please. You’ll need the following ingredients: 225g/8oz softened butter, 225g/8oz light muscovado sugar, 4 large eggs, 1 teaspoon vanilla extract, 225g/8oz self-raising flour, 1 teaspoon baking powder, 4 tablespoons milk, 4 tablespoons strong black coffee, 75g/3oz walnuts, chopped, and 4 tablespoons walnuts, chopped, for decoration.
Instructions
Preheat your oven to 180C/350F/Gas 4. Grease and line two 20cm/8in sandwich tins. Place the butter and sugar into a large bowl and beat together until light and fluffy. Gradually beat in the eggs and vanilla extract. Sift the flour and baking powder together, then fold into the mixture. Heat the milk and coffee together in a saucepan until just warm. Add to the cake mixture, stirring until combined. Finally stir in the chopped walnuts. Divide the mixture between the two tins and spread evenly. Bake in the preheated oven for 25-30 minutes or until a skewer inserted into the centre of the cake comes out clean. Leave to cool in the tins for 10 minutes, then turn out onto a wire rack to cool completely.
Decorating
To decorate the cake, place one of the cakes onto a serving plate. Mix the coffee and the remaining butter together to make a smooth paste. Spread the paste over the top of the first cake. Place the second cake onto the top, spread over some of the remaining coffee butter paste, then sprinkle over the chopped walnuts.
