Chicken Satay And Peanut Dipping Sauce Recipe

Ingredients

For the Chicken Satay, you will need:

  • 2 pounds of chicken breast, cut into thin strips
  • 2 tablespoons of olive oil
  • 1 teaspoon of ground coriander
  • 1 teaspoon of ground cumin
  • 1 teaspoon of ground turmeric
  • 1 teaspoon of ground ginger
  • 1 teaspoon of garlic powder
  • 1 teaspoon of paprika
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of freshly ground black pepper
  • 1/2 teaspoon of cayenne pepper
  • 2 tablespoons of freshly squeezed lemon juice
  • 1/4 cup of coconut milk
  • Wooden skewers, soaked in water for at least 30 minutes

For the Peanut Dipping Sauce, you will need:

  • 1/2 cup of creamy peanut butter
  • 1/4 cup of low-sodium soy sauce
  • 1/4 cup of honey
  • 2 tablespoons of freshly squeezed lime juice
  • 1 tablespoon of sesame oil
  • 1 tablespoon of freshly grated ginger
  • 2 cloves of garlic, minced
  • 1 teaspoon of Sriracha sauce, or more to taste
  • 2 tablespoons of chopped cilantro
  • 1/4 teaspoon of freshly ground black pepper

Instructions

Preparing the Chicken Satay:

In a large bowl, combine the olive oil, coriander, cumin, turmeric, ginger, garlic powder, paprika, salt, black pepper, and cayenne pepper. Add the chicken strips to the bowl and toss until the chicken is fully coated in the spice mixture. Add the lemon juice and coconut milk and stir to combine. Cover the bowl and place it in the refrigerator to marinate for at least 1 hour or up to 24 hours.

Once the chicken has finished marinating, preheat the oven to 375°F. Thread the chicken strips onto the wooden skewers. Place the skewers on a baking sheet and bake for 20-25 minutes, or until the chicken is cooked through and the edges are lightly charred.

Making the Peanut Dipping Sauce:

In a medium bowl, whisk together the peanut butter, soy sauce, honey, lime juice, sesame oil, ginger, garlic, Sriracha sauce, cilantro, and black pepper until smooth. Taste and adjust the seasoning, if desired.
