Ingredients
- 3 ripe bananas
- 1/2 cup plant-based milk
- 1 teaspoon vanilla extract
- 1 cup oat flour
- 1/2 cup almond flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup vegan dark chocolate chips or chopped walnuts (optional)
Instructions
Preparing the batter:
Preheat oven to 350°F (177°C) and lightly grease a 9-inch loaf pan.
In a medium bowl, mash the bananas. Then add the milk and vanilla extract and whisk until combined.
In a large bowl, combine the oat flour, almond flour, baking soda, baking powder, and salt. Whisk until combined.
Add the wet ingredients to the dry ingredients and mix until just combined. Do not over mix.
If using, add the vegan dark chocolate chips or chopped walnuts and mix until combined.
Baking the banana bread:
Pour the batter into the greased loaf pan and spread it evenly.
Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
Let the banana bread cool in the pan for 10 minutes before transferring it to a cooling rack and cooling completely.
