Ingredients
- 170g softened butter
- 170g caster sugar
- 3 large eggs
- 170g self-raising flour
- 2-3 lemons, zested and juiced
- 2 tablespoon of golden syrup
- Extra butter for greasing
Instructions
Step 1: Preheat the oven and grease the tin
Preheat your oven to 180°C/355°F/Gas 4. Grease and line a 20cm/8in round cake tin with baking parchment.
Step 2: Cream the butter and sugar
Step 3: Add the eggs
Add the eggs one at a time and beat until fully incorporated. If the mixture starts to curdle, add a tablespoon of the flour.
Step 4: Add the flour and lemon zest
Fold in the flour and lemon zest.
Step 5: Bake the cake
Pour the mixture into your prepared tin and bake for 25-30 minutes. When it’s ready, a skewer inserted into the centre of the cake should come out clean.
Step 6: Make the drizzle
Mix together the lemon juice, golden syrup and a pinch of salt. When the cake is cooked, pour the mixture over the warm cake and leave to cool in the tin.
