Instructions

To begin, preheat your oven to 375 degrees Fahrenheit. Heat the olive oil in a large skillet over medium-high heat. Add the onion, garlic, carrots, and celery and sauté for 5 minutes, stirring frequently. Add the thyme, oregano, and smoked paprika and cook for another minute.

Add the cooked lentils, vegetable broth, tomato paste, vegan Worcestershire sauce, sea salt, and black pepper to the skillet. Reduce the heat to low and simmer for 15 minutes, stirring occasionally. Add the nutritional yeast, if using, and stir to combine.
