Mary Berry All In One Lemon Drizzle Cake

Ingredients

225g butter
225g caster sugar
4 eggs
225g self-raising flour
2 tsp baking powder
Grated zest and juice of 1 lemon
50g granulated sugar

Instructions

The first step is to preheat your oven to 180°C/160°C fan/gas mark 4. Grease and line a 20cm round cake tin with greaseproof paper.

In a large bowl, cream the butter and caster sugar together until light and fluffy. Add in the eggs one at a time, beating the mixture after each addition. Sift in the flour and baking powder and fold into the mixture. Finally, add in the grated lemon zest and juice and mix until fully combined.

Spoon the cake mixture into the prepared tin and spread evenly. Bake in the preheated oven for 25-30 minutes until golden brown and a skewer inserted into the centre comes out clean.

Meanwhile, make the lemon drizzle. In a small bowl, mix together the granulated sugar and the juice of the remaining lemon.

Once the cake is baked, use a skewer to make several holes in the cake. Pour over the lemon drizzle and leave to cool in the tin. Once cool, remove from the tin and enjoy!
