Smoked Paprika and Lemon Chicken Skewers


These Smoked Paprika and Lemon Chicken Skewers are a delicious way to enjoy chicken. All you need to do is marinate the chicken overnight and then thread them onto skewers and grill them until cooked through.

Ingredients:


- 1kg/2lb 4oz skinless chicken breasts, cut into large chunks
- 2 lemons, zested and juiced
- 1-2 tbsp smoked paprika
- 2 tbsp olive oil
- 2 garlic cloves, crushed
- A few sprigs of fresh thyme
- 2 tbsp runny honey
- Salt and freshly ground black pepper
- Wooden or metal skewers

Instructions:


1. Place the chicken into a large bowl and add the lemon zest, lemon juice, paprika, olive oil, garlic, thyme, honey and season with salt and pepper.
2. Mix everything together until the chicken is evenly coated in the marinade.
3. Cover the bowl with cling film and leave to marinate in the fridge overnight.
4. When you’re ready to cook, preheat the grill to medium-high.
5. Thread the chicken onto the skewers, taking care not to overcrowd them.
6. Place the skewers on a baking tray and grill for 10-15 minutes, turning occasionally, until the chicken is cooked through.
7. Serve with a side of your choice.

- 1 tsp dried thyme
- 250ml/8fl oz chicken stock
- 2 tbsp crème fraîche
- Salt and freshly ground black pepper

Instructions:


1. Heat the olive oil in a large frying pan over a medium-high heat.
2. Add the bacon and fry for a few minutes until golden and crispy.
3. Add the garlic and mushrooms and cook for a few minutes until the mushrooms are golden.
4. Add the thyme and season with salt and pepper.
5. Add the chicken and cook for about 10 minutes, turning occasionally, until cooked through.
6. Pour in the chicken stock and bring to a simmer.
7. Add the crème fraîche and stir until combined.
8. Simmer for a few minutes until the sauce has thickened.
9. Serve with a side of your choice.
