Luxury Coffee and Walnut Cake Recipe
Ingredients
This delicious cake is easy to make and perfect for a special occasion. You will need:
- 200g softened butter
- 200g light brown sugar
- 4 large eggs
- 200g self-raising flour
- 2 tsp baking powder
- 2 tsp instant coffee granules
- 2 tsp cocoa powder
- 3 tbsp milk
- 100g walnut pieces
Instructions
To make this cake, start by preheating your oven to 170C/Gas Mark 3 and greasing two 20cm sandwich tins.
In a large bowl, cream together the butter and sugar until pale and fluffy. Beat in the eggs one at a time, adding a spoonful of flour with each egg to prevent the mixture from curdling.
Sift in the remaining flour, baking powder, coffee and cocoa powder and mix to combine. Finally, stir in the milk and walnuts.
Divide the mixture between the two sandwich tins and bake for 25-30 minutes, or until a skewer inserted into the middle of the cake comes out clean. Leave to cool in the tins for 10 minutes before turning out onto a wire rack to cool completely.
Serving Suggestion
This coffee and walnut cake is delicious served with a dollop of cream or a scoop of ice cream. You can also serve it with a drizzle of coffee or chocolate sauce.
