Instructions

Rub the butter into the flour with your fingertips until the mixture resembles breadcrumbs. Add the cold water and stir until the dough starts to come together. Knead the dough until it is smooth and elastic. Cover the dough in cling film and place it in the fridge to chill for at least 20 minutes.

Next, prepare the filling. In a large bowl, combine the minced beef, onion, potato, swede, Worcestershire sauce, thyme, salt, and pepper. Mix the ingredients together until they are well combined.

Now it’s time to assemble the pasties. Take the pastry out of the fridge and roll it out on a lightly floured surface until it is about 1/8 inch thick. Cut out circles from the pastry with a 4-inch cookie cutter. Place a generous amount of the filling in the center of each circle and then fold the circle in half. Crimp the edges together with a fork. Place the pasties on a greased baking sheet and brush the tops with the egg white. Bake the pasties for 30-35 minutes, or until they are golden-brown.
