- 1 large potato, boiled and mashed
- 1/2 cup cauliflower, boiled and mashed
- 1/2 cup carrots, boiled and mashed
- 1/2 cup green beans, boiled and mashed
- 1/2 cup capsicum, diced
- 1/4 cup fresh coriander leaves, chopped
- 1/2 cup Pav buns
- 2 tablespoons butter
- Salt to taste
Instructions
Heat oil in a pan, and add cumin seeds. Once the cumin seeds splutter, add the garlic and onion. Sauté for 3-4 minutes until the onions are golden brown. Add the tomatoes, turmeric powder, red chilli powder, coriander powder, garam masala and salt. Cook until the tomatoes are soft and pulpy.
Add the boiled vegetables and capsicum. Mix well and cook for 5 minutes. Add the mashed potato and mix everything together. Cook for another 5 minutes. Add the chopped coriander leaves and mix well. Turn off the heat.
In a separate pan, add butter and toast the pav buns. Serve hot with the pav buns and a dollop of butter.
