- 2 cups of gluten-free flour
- 1 teaspoon of baking powder
- 1/2 teaspoon of baking soda
- 1/4 teaspoon of salt
- 1/2 cup of vegan butter
- 1/2 cup of coconut sugar
- 2 mashed ripe bananas
- 2 tablespoons of flax meal
- 1/2 cup of almond milk
- 1 teaspoon of vanilla extract
- 1/4 cup of chopped walnuts (optional)

Instructions



Preheat the oven to 350°F and grease a 9-inch loaf pan with vegan butter. In a large bowl, mix together the gluten-free flour, baking powder, baking soda, and salt. In a separate bowl, cream together the vegan butter and coconut sugar until light and fluffy. Add in the mashed bananas and mix until combined.

In a small bowl, mix together the flax meal and almond milk and let sit for 5 minutes. Add the flax mixture and vanilla extract to the banana mixture and mix until combined. Add the wet ingredients to the dry ingredients and mix until just combined. Fold in the chopped walnuts if desired.

Pour the batter into the greased loaf pan and bake for 45-50 minutes or until a toothpick inserted into the center comes out clean. Let cool for 10 minutes before removing from the pan and cooling completely on a wire rack. Serve and enjoy!
