Instructions
Preheat the oven to 425°F. Line a large baking sheet with parchment paper and set aside.
In a large bowl, mix together the flour, garlic powder, paprika, oregano, salt, and pepper. In a separate bowl, whisk together the eggs. In a third bowl, combine the panko bread crumbs and olive oil.
Working one at a time, dip the cauliflower florets into the flour mixture, then into the eggs, and then into the panko bread crumbs. Place the coated florets onto the prepared baking sheet.
Bake the cauliflower for 20 minutes, flipping once halfway through.
In a small bowl, whisk together the buffalo sauce and blue cheese or ranch dressing.
Once the cauliflower bites are done baking, transfer them to a large bowl and pour the buffalo sauce mixture over them. Toss the cauliflower bites until they are evenly coated.
