Instructions

In a large bowl, cream together the softened butter and caster sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

In a separate bowl, sift together the self-raising flour and plain flour. Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Beat until the batter is smooth and lump-free.

Spoon the batter into the prepared mini-muffin tin, filling each cup about two-thirds full. Bake for 10-12 minutes, or until a toothpick inserted into the centre of the cakes comes out clean. Allow the cakes to cool completely before serving.
