How To Make Indian Pilau Rice
Ingredients
To make Indian pilau rice you will need:
- 2 cups long-grain basmati rice
- 3 tablespoons vegetable oil
- 2 whole cloves
- 1 cinnamon stick
- 1 bay leaf
- 1/2 teaspoon cumin seeds
- 2 chopped onions
- 1/2 teaspoon turmeric powder
- 2 1/4 cups hot chicken or vegetable stock
- 1/4 cup raisins (optional)
- Salt to taste
Instructions
To make Indian pilau rice, start by washing the basmati rice until the water runs clear. Drain and set aside.
Next, heat the oil in a large saucepan over medium heat. Add the cloves, cinnamon stick, bay leaf, and cumin seeds. Fry for 30 seconds, stirring constantly.
Add the chopped onions and fry for a few minutes until golden brown. Add the turmeric powder and stir to combine.
Add the drained rice and fry for a further 2 minutes. Then add the hot stock, raisins (if using) and salt to taste. Bring to the boil, then reduce the heat and simmer for 15 minutes or until the rice is cooked.
Remove from heat and fluff up the rice with a fork. Serve hot with your favorite curry or side dish.
