Courgette Pea and Basil Soup Ottolenghi
Ingredients
This delicious Courgette Pea and Basil Soup Ottolenghi dish is sure to make your taste buds dance! All you need is: 2 tablespoons of olive oil, 1 large onion, peeled and diced, 1 garlic clove, peeled and finely chopped, 3 large courgettes, diced into 1cm cubes, 500g frozen peas, 1 litre vegetable stock, 1 large bunch of basil, leaves picked, sea salt and freshly ground black pepper.
Instructions
Start by heating the olive oil in a large saucepan over a medium heat. Once hot, add the onion and garlic and fry for a few minutes until softened. Then add the courgettes and cook for a few minutes more until lightly golden. Add the peas, vegetable stock and a good pinch of salt and pepper and bring to the boil. Turn down the heat and simmer for 15 minutes until the vegetables are tender.
Once the vegetables are cooked, remove the pan from the heat and stir in the basil leaves. Use a handheld blender to blend the soup until smooth. If the soup is too thick, add a little more stock or water. Taste and adjust the seasoning if necessary.
Serve the soup hot or cold with a drizzle of olive oil and a sprinkle of freshly ground black pepper. Enjoy!
