Ingredients
For the graham cracker crust:
- 2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup melted butter
- 1/4 teaspoon ground cinnamon
For the cheesecake filling:
- 3 (8-ounce) packages cream cheese, softened
- 1 cup sugar
- 3 large eggs
- 2 tablespoons all-purpose flour
- 1 teaspoon vanilla extract
- 1/2 cup Bailey's Irish Cream liqueur
Instructions
To make the graham cracker crust: Preheat oven to 350° F. In a medium bowl, combine the graham cracker crumbs, sugar, melted butter, and cinnamon. Mix until evenly combined and the mixture resembles wet sand. Press the graham cracker mixture into the bottom and up the sides of a 9-inch springform pan. Bake for 8 minutes, then set aside to cool.
To make the cheesecake filling: In the bowl of a stand mixer or a large bowl with a hand mixer, beat the cream cheese until light and fluffy. Add the sugar and beat until completely combined. Add the eggs, one at a time, beating until just combined. Add the flour, vanilla extract, and Bailey's Irish Cream and mix until just combined. Do not overmix.
Pour the cheesecake filling into the prepared crust. Bake for 45 minutes. The cheesecake will still be a little jiggly in the center, but will firm up more as it cools. Allow the cheesecake to cool completely before serving.
