Instructions
To make this delicious cake, start by preheating your oven to 180°C/350°F/gas mark 4. Grease and line two 20cm/8in sandwich tins.
In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs, one at a time, adding a tablespoon of the flour with each one. Sift in the remaining flour and baking powder and fold in.
Stir in the dissolved coffee and walnuts, then add the milk and mix until everything is combined. Divide the mixture equally between the two prepared tins and bake for 25 minutes or until golden and a skewer inserted into the centre comes out clean.
Leave to cool in the tins for 10 minutes before turning out onto a wire rack to cool completely.
Once the cakes are cool, heat the apricot jam in a saucepan until boiling. Brush over the tops of the cakes to form a seal.
For the icing, cream together the butter and icing sugar until light and fluffy. Dissolve the coffee in the boiling water and stir into the butter and sugar mixture.
Spread the icing over one of the cakes and sandwich together with the other. Serve and enjoy!
