  • 1/2 cup chopped candied orange peel
  • 1/2 cup chopped candied lemon peel
  • 1/2 cup chopped almonds
  • 1/2 cup brandy
  • 2 eggs, lightly beaten
  • 1/2 cup melted butter

Instructions

In a large bowl, whisk together the flour, baking soda, cinnamon, nutmeg, allspice, cloves and salt. Add the brown sugar, raisins, currants, figs, dates, candied orange and lemon peels, and almonds. Stir to combine.

In a separate bowl, combine the brandy, eggs and melted butter. Pour into the dry ingredients and stir until everything is evenly combined. The mixture should be quite thick and sticky.

Grease a 2-quart pudding basin and spoon the mixture into the basin. Cover the basin with foil and secure with string. Place the pudding basin in a large pot and fill the pot with water until it reaches halfway up the sides of the basin. Bring to a boil and then reduce to a simmer. Simmer for 2 to 3 hours, checking the water level every 30 minutes and adding more if necessary.

When the pudding is done, remove from the heat and let cool before turning out onto a plate. Serve warm with your favorite sauce or cream.
