Nigella's Chicken and Chorizo Paella
Ingredients

- 6-8 chicken thighs, skin on and bone in
- 150g chorizo, sliced
- 2 cloves garlic, minced
- 1 red onion, diced

- 1 red pepper, diced
- 1/2 a teaspoon sea salt

Instructions
To make this delicious paella, start by heating a large skillet or paella pan over medium heat. Add the chicken thighs, skin side down, and cook for about 5 minutes until the skin is golden and crispy. Flip the chicken and cook for an additional 3-4 minutes. Remove the chicken and set aside on a plate.
Next, add the chorizo and cook for about 5 minutes until it starts to brown. Add the garlic, red onion, and red pepper and cook for an additional 4-5 minutes, stirring occasionally. Add the rice, smoked paprika, saffron threads, and chicken stock to the pan and stir to combine. Bring the mixture to a boil, then reduce the heat to low and cover with a lid. Allow the paella to simmer for about 15 minutes, stirring occasionally.
After 15 minutes, add the chicken back to the pan, nestling it into the rice. Cover with the lid and cook for an additional 15 minutes. Remove the lid and check the rice to make sure it is cooked through. If the rice is still a bit firm, cover and cook for an additional 5 minutes. Once the rice is cooked, turn off the heat and let the paella rest for about 5 minutes before serving.
Serve the paella with a sprinkle of chopped parsley and a squeeze of lemon juice. Enjoy!
