Chicken Leek And Mushroom Pie By Jamie Oliver
Ingredients
For this dish we will need: 500g of puff pastry, 1 large onion, 2 cloves of garlic, 1 small leek, 250g of mushrooms, 2 tablespoons of plain flour, 1 tablespoon of English mustard, 2 tablespoons of fresh flat-leaf parsley, 500g of cooked chicken, 100ml of white wine, 300ml of chicken stock, 2 tablespoons of olive oil, salt and pepper.
Instructions
To start, preheat your oven to 180°C/ 350°F/gas 4. Then, peel and finely slice the onion, garlic and leek. Wash the mushrooms and slice them into thin slices. Heat the oil in a large frying pan over a medium heat and add the sliced onion, garlic and leek. Gently fry for about 10 minutes until softened and golden. Then add the mushrooms and fry for a further 5 minutes.
Add the flour to the pan and stir for a minute. Then add the mustard and parsley and stir again. Now add the chicken and white wine, stirring to combine. Cook for a few minutes until the wine has reduced. Add the chicken stock and season with salt and pepper. Simmer for 5 minutes until the sauce has thickened. Remove from the heat.
Roll out the puff pastry on a lightly floured surface to about 5mm thick. Line a deep 20cm pie dish with the pastry so that the edges overhang. Pour the filling into the pie dish. Cut the remaining pastry into strips and arrange the strips in a lattice pattern over the filling. Trim the edges of the pastry and press down to seal the edges. Brush the pastry with beaten egg and bake in the preheated oven for 25-30 minutes until golden brown.
