Ingredients

Instructions

To make the fish fingers, start by whisking together the flour, baking powder, garlic powder, salt, black pepper, and cayenne pepper in a large bowl. In a separate bowl, combine the egg, buttermilk, and beer. Dip each piece of cod into the wet mixture, and then into the dry mixture. Make sure the fish is fully coated. Heat the vegetable oil in a large skillet over medium-high heat. Once the oil is hot, add the fish and cook for 2 to 3 minutes per side, or until golden brown and cooked through. Remove the fish from the skillet and place it on a paper towel-lined plate to drain. To make the custard, whisk together the eggs and sugar in a medium bowl until light and fluffy. In a separate bowl, combine the milk, vanilla extract, nutmeg, and salt. Whisk the milk mixture into the egg mixture and stir until fully combined. Pour the custard into a 9-inch pie dish and place the fish fingers on top. Place the dish in a preheated 350-degree oven and bake for 20 to 25 minutes, or until the custard is set. Let cool for 10 minutes before serving.
