What Vegetables Go With Biryani?

Ingredients:

  • 1 cup Basmati rice
  • 2 tablespoons of ghee (clarified butter)
  • 1 onion, finely chopped
  • 1 teaspoon of ginger-garlic paste
  • 2 green chillies, finely chopped
  • 1 teaspoon of garam masala
  • 1 teaspoon of coriander powder
  • 1 teaspoon of cumin powder
  • 2 tablespoons of yoghurt
  • 1/4 teaspoon of turmeric powder
  • 1 carrot, diced
  • 2 potatoes, diced
  • 1/2 cup of green peas
  • 1/4 cup of coriander leaves, finely chopped
  • Salt to taste

Instructions:

To begin, soak the basmati rice in water for 30 minutes. In a large pot, heat the ghee over medium heat. Add the onion and fry until it is golden brown. Then add the ginger-garlic paste and green chillies and fry for a few minutes. Add the garam masala, coriander powder, cumin powder, yoghurt, turmeric powder, and salt. Fry until the spices are fragrant and then add the vegetables. Fry for a few minutes and then add the soaked basmati rice. Stir to combine and then add 2 cups of water. Cover the pot and cook over low heat until the rice is cooked through. Finally, garnish with the coriander leaves and serve hot.
