Mini Easter Egg Cheesecake Recipe

Ingredients
For the crust:
- 1/2 cup graham cracker crumbs
- 2 tablespoons butter, melted
For the cheesecake filling:
- 1/2 cup granulated sugar
- 2 8-ounce packages cream cheese, softened
- 2 eggs
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 tablespoons all-purpose flour
- 1/2 cup mini Easter eggs, chopped
Instructions
1. Preheat oven to 350 degrees F. Grease a mini-muffin tin with cooking spray.
2. In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until well combined.
3. Divide mixture among muffin tins. Press down firmly with the back of a spoon. Bake for 5 minutes.
4. In a large bowl, beat together cream cheese and sugar until smooth and creamy. Add eggs, vanilla extract, salt, and flour. Beat until well combined.
5. Fold in chopped Easter eggs. Divide mixture among muffin tins. Bake for 15 minutes, or until cheesecakes are set.
6. Let cool before serving. Enjoy!
