Ingredients
For the Chole:
- 2 cups chickpeas, soaked overnight
- 2 tablespoons oil
- 1 teaspoon cumin seeds
- 1 teaspoon garam masala
- 1 teaspoon turmeric powder
- 2 tablespoons grated ginger
- 2 cloves garlic, minced
- 1 large onion, chopped
- 2 green chilies, chopped
- 1 tomato, chopped
- 2 tablespoons tomato paste
- Salt and pepper to taste
For the Bhature:
- 2 cups all-purpose flour
- 2 teaspoons sugar
- 1 teaspoon baking powder
- 2 tablespoons yogurt
- 2 tablespoons melted butter
- ½ cup warm water
- Oil for deep-frying
Instructions
To make the Chole:
1. Heat the oil in a large pot over medium heat.
2. Add the cumin seeds and cook until they start to crackle.
3. Add the coriander powder, garam masala, and turmeric powder and cook for a few seconds.
4. Add the ginger and garlic and cook until fragrant.
5. Add the onion and green chilies and cook until the onion is soft and translucent.
6. Add the tomato and tomato paste and cook until the tomato is soft.
7. Add the chickpeas and cook for 5 minutes.
8. Add salt and pepper to taste.
9. Reduce the heat to low and simmer for 25 minutes.
10. Remove from heat and let cool.
To make the Bhature:
1. In a large bowl, combine the flour, sugar, and baking powder.
2. Add the yogurt and melted butter and mix until a dough forms.
3. Gradually add the warm water, one tablespoon at a time, until the dough is soft and pliable.
4. Turn the dough out onto a lightly floured surface and knead for 5 minutes.
5. Divide the dough into 12 equal balls.
6. Flatten each ball into a circle about 4 inches in diameter.
7. Heat the oil in a large deep skillet over medium-high heat.
8. Fry the bhature in batches for 2-3 minutes, flipping once, until golden brown and puffy.
9. Drain on a paper towel-lined plate.
Serving
