Aubergine and Sweet Potato Curry with Coconut Milk

Instructions
- Heat the olive oil in a large saucepan over medium heat.
- Add the onion and red pepper, and cook until softened, about 5 minutes.
- Add the garlic, ginger, cumin, coriander, garam masala, turmeric, chilli powder (if desired), salt and pepper. Cook, stirring constantly, for 1 minute.
- Add the sweet potatoes and aubergine to the pot, and stir well to coat in the spices. Cook for 5 minutes.
- Add the coconut milk and vegetable stock or water. Bring to a boil, reduce heat to low and simmer for 20 minutes, or until the vegetables are tender.
- Remove from heat, stir in the coriander and serve hot.
