Ingredients
- 225g (8oz) raisins
- 175g (6oz) sultanas
- 175g (6oz) currants
- 175g (6oz) mixed peel
- 175g (6oz) soft light brown sugar
- 225g (8oz) self-raising flour
- 2 large eggs
- 3 tablespoons of golden syrup
- Grated zest of 1 lemon
- 100ml (4fl oz) warm tea
- 25g (1oz) butter, melted
Instructions
1. Preheat your oven to 160C/fan 140C/gas 3.
2. Place the raisins, sultanas, currants, mixed peel and brown sugar into a large bowl and mix together.
3. In a separate bowl, whisk together the eggs, golden syrup, lemon zest, warm tea and melted butter.
4. Pour the egg mixture into the dried fruit and stir together.
5. Sift in the flour and mix together until you have a thick batter.
6. Grease a 20cm (8in) square cake tin and pour the batter into it.
7. Bake in the preheated oven for 1 hour and 15 minutes or until the cake is golden brown and a skewer inserted into the centre comes out clean.
8. Allow the cake to cool in the tin for 10 minutes before turning out onto a wire rack to cool completely.
9. Serve with a cup of tea and a dollop of cream.
