3. Add the ginger, green chili, cumin, cardamom, cloves, cinnamon, black pepper, and bay leaves and cook for a few minutes, stirring frequently.
4. Add the lemon juice and the washed basmati rice and stir to combine.
5. Add the vegetable oil or ghee and stir again.
6. Add 3 cups of water and bring to a boil.
7. Reduce the heat to low, cover the pot and cook for about 15 minutes or until the rice is tender and all the liquid is absorbed.
8. Remove from heat and let the pilau rest for about 10 minutes before serving.
