Ingredients
For the Base:
• 2 cups of crushed digestive biscuits
• ½ cup of melted butter
For the Filling:
• 250g of full-fat cream cheese
• ½ cup of caster sugar
• 2 tablespoons of plain flour
• 2 eggs
• 1 teaspoon of vanilla essence
• ½ cup of sour cream
• 12 Ferrero Rocher chocolates
• 1 teaspoon of cocoa powder
Instructions
1. Preheat the oven to 180°C (355°F). Grease an Easter egg baking tin with butter, then line with greaseproof paper.
2. To make the base, combine the crushed digestive biscuits and melted butter in a bowl until fully mixed. Press the biscuit mixture into the prepared tin and bake for 10 minutes. Remove from the oven and leave to cool.
3. To make the filling, beat the cream cheese, caster sugar and flour in a bowl until creamy. Add the eggs one at a time, beating each until fully incorporated. Add the vanilla essence and sour cream and mix until combined.
4. Pour the cream cheese mixture into the prepared tin. Place the Ferrero Rocher chocolates on top of the mixture and sprinkle with the cocoa powder.
5. Bake in the oven for 20-30 minutes, or until the centre of the cheesecake is just set. Leave to cool, then refrigerate for at least 2 hours before serving.
